Buffalo Dinner Supreme

I've spent months perfecting this recipe. I hope you enjoy it as much as we do.

1 pound buffalo burger or other meat of your choice
2 - 10.5 oz cans cream of mushroom soup
1 cup frozen peas
1 cup frozen carrots
1/8 teaspoon or a pinch of celery flakes and/or parsley flakes
4 cups (any brand) rotini noodles
Salt and pepper to taste

Microwave Instructions:  Brown or Boil meat (depending on the type of meat) until tender. Be sure to drain and rinse the meat that you cook to get rid of all the grease possible.

With mushroom soup cans: Mix 1 part low fat milk to 1 part water (this would equal about 2 cans milk and 2 cans water), and bland well.

Place rotini noodles and all other ingredients into mixture above and place in the microwave over for 20 minutes on high. Stir once every 5 minutes until you have a nice thick sauce (about 20 minutes, sometimes longer depending on amount of ingredients you use). Let stand 5 minutes or so before serving.

Stove Top Instructions:  Brown or Boil meat (depending on the type of meat) until tender. Be sure to drain and rinse the meat that you cook to get rid of all the grease possible.

In large pot, mix milk, water and mushroom soup same as above. Then place rotini noodles and all other ingredients into mixture and bring to a full boil, then reduce heat to a simmer until you have a nice thick sauce, stir often. Takes about 45 minutes on stove top.

Serves about 4 people.

Note:  The buffalo meat can be substituted with any type of meat including hamburger, chicken, turkey, etc. I have even use steak stripes. Pork stripes work nicely as well. You can also add a little cheese to give it extra taste...however...my husband's heart doctor and our family doctor are now saying that cheese will plug your arteries.

Goulash Morning Star's Way

4 cups half cooked macaroni, drained
1 can stewed tomatoes
1 - 32 oz. jar spaghetti sauce
Salt and pepper to taste
1 pound cooked hamburger, drained and rinsed

Mix all ingredients together in the same pot. Add enough water to avoid burning. Cook at a simmer until macaroni is completely done, but not over done. Serve while hot.

Home Made Sloppy Joes

1 can stewed tomatoes, diced

2 cups BBQ sauce

2 cups ketchup

1 tablespoon relish

1 teaspoon mustard

1/2 cup diced green pepper

1 pound cooked hamburger or buffalo meat, drained and rinsed

While cooking the hamburger or buffalo meat with the 1/2 cup diced green pepper, mix the other ingredients together in a medium size bowl.  Once the hamburger or buffalo meat is completely cooked, add the mixture and simmer until thick.  Serve while hot.  May be served with French fries or other choice of potatoes.
